Chef Brett Binninger-Schwartz brings bold flavors, refined technique, and a whole lot of heart to every dish he creates. Making it to the top 8 on Season 21 of Hell’s Kitchen and having worked in some of Nashville’s award-winning restaurants, Brett is known for his high standards, creative edge, and deep respect for ingredients. But beyond the spotlight, his real passion lies in creating unforgettable experiences, the kind that happen when good food, good people, and good stories come together.

Brett understands just how meaningful it is to have a place that feels both special and familiar. With his wife Ashley and their daughter Maggie by his side, he’s building that kind of space at Binninger-Schwartz… a fine dining restaurant that feels personal, intentional, and deeply rooted in community.
For Brett, it’s not just about the food (though he takes that very seriously). It’s about creating a space where guests feel seen, known, and welcomed- and where quality, creativity, and connection are always on the menu.

our restaurant lives inside a building that once operated as a 1930s car dealership called Walker Motor Company, run by Allen Walker- and later, a laundromat called Rymer Dry Cleaners and Laundry.
We’ve preserved some of its original charm while adding moody lighting, warm wood tones, and vintage-inspired touches that reflect both past and present. As you look around the restaurant, you might notice nods to the building’s automotive and laundromat roots.

Co-owner Eric Dill, a Beech Grove-based developer, played a hands-on role in bringing the vision to life, his contracting company Dill Contracting is behind the buildout that turned a piece of Manchester history into something unforgettable.
